Avocado Egg Recipe

Hi Team – This avocado egg recipe is great for a pre-workout snack. This combination is quick and easy to make. Before we get started, I want to share my day with you.

My day was very green. It was filled with avocados, the word “go,” eggs, more avocados, and even more exercises. Next time I’m going to work in some peanut butter to mix it up, ha! Then it’ll be the “perfect day!”

I’m going to admit it…I’m in love with Pinterest. Some people are so creative and finally they have an outlet to share those wonderful ideas. Although sometimes I feel like I need a Pintervention, I’m that obsessed.

I saw the best idea as I was browsing the “Food and Drink” section this afternoon. This idea is perfect for a pre-work snack; I call it…the Avocado Egg.

Avocado Egg Recipe

Ingredients

  • An Avocado
  • 2, Medium Sized Eggs

Instructions

  1. Cut and pit the avocado. Preheat oven to 350*
  2. Use a spoon to make the hole of the avocado larger.
  3. Crack an egg and place into the avocado hole.
  4. Cook for 20-25 minutes or until the egg is finished.

Delicious! I ate my new favorite snack and then I headed to the gym for my first Bounce Class. Bounce takes place on the mini trampoline. The workout consisted of interval sprints, and plyometric movements geared toward burning calories.

Attending fitness conferences have been my only exposure to mini trampoline cardio classes. I was very excited! Here’s what we did in class:

60 Minute Mini Trampoline Workout:

  1. 5x Sprints of each time frame (work and rest for the same amount of time) – :10, :20, :30.
  2. Intervals: 3x sets of the following:
    1. Right basic onto the trampoline for :30, while holding hand weights
    2. Repeat left basic with weights, :30
    3. Shoulder press jumping jacks, :30
  3. 5x Sprints of each time frame (work and rest for the same amount of time) – :40, :50, :60.
  4. Intervals: 3x sets of the following:
    1. Mountain climbers, :30
    2. Jumping Jacks off the tramp, :30
    3. Sprints, :30
  5. 3x :60 Sprints
  6. Abs on tramp

I can still here the instructor saying “GO!” to signal the new interval. It was a fun class.

My green day was not finished yet. I drove to a Mexican restaurant after class for a small bite to eat. I usually order a side of grilled chicken and veggies. And…how can you go to a Mexican restaurant without ordering some guacamole. Yum!

“Go,” green, guac, it was a great day!
